How cool is this?! Our staff lounge contains a board for the staff to contribute healthy recipes that people may enjoy as well as a section for exercise. A lot of things have caught my eye such as pineapple month with an article all about different meals you can make with pineapple...yum! But, the one I want to mention in particular, now that we are entering the fall season is a low-fat apple dessert. Here's the recipe:
6 cups Macintosh Apples - medium/sliced
1/2 tsp cinnamon
1/4 cup uncooked oats
1/3 cup light brown sugar
1/4 cup all purpose flour
1/4 tsp nutmeg
1-1/2 tbsp. Promise Light Spread
1. Preheat the oven to 375
2. Spray an 8x8 baking pan with non-stick cooking spray
3. Layer the apples in the dish
4. Add all of the remaining ingredients (that you will mix together in a bowl) on top of the apples
5. Bake for 30 minutes, or until the apples are tender
It's low-fat with minimal sugar, flour, and margarine! Enjoy! I will be making this for parents on Sunday at family dinner. I'll let you know how it is.
